1/2 cup full-fat coconut milk

Instructions:

1. Preheat the oven to 375 degrees F.

2. Toss butternut squash with olive oil and salt and pepper. Spread onto a baking sheet and roast for 25-30 minutes, or until tender.

1/4 tsp cumin

1/4 tsp smoked paprika

1/4 tsp garlic powder

1/2 cup shredded cheddar cheese, divided

8-10 small flour tortillas

sour cream, for serving

Instructions:

1. Preheat the oven to 375 degrees F.

2. Toss sweet potatoes with olive oil and salt and pepper. Spread onto a baking sheet and roast for 25-30 minutes, or until tender.

3. Let the roasted sweet potatoes cool slightly, then add them to a large bowl with black beans, salsa, chili powder, cumin, smoked paprika, garlic powder, and 1/4 cup shredded cheese.
